Looking for something different for a side salad? Cucumbers are often a key ingredient in a fresh salad, but it’s not often that they are the salad.
They’re a vegetable that is widely available year round and they make a particularly fresh, easy and tasty side dish.
This week, I’ve provided two easy recipes using this common ingredient.
The first features cucumbers in a simple dressing of wine vinegar, grainy mustard, a bit of honey and fresh dill.
Dill is an excellent partner with cucumber and this salad would be perfect alongside grilled salmon.
The second recipe features feta cheese, mint and lemon with the cucumber.
Both are quick, easy and delicious.
CUCUMBER SALAD WITH DILL
3 tbsp. (45 ml) white wine vinegar
1 tbsp. (15 ml) grainy mustard
2 tsp. (10 ml) honey
1/2 shallot, sliced very thinly
1 large English cucumber cut in half lengthwise then into 1/8-inch slices on an angle
